Teriyaki Salmon with Vegetables
Serves 2
INGREDIENTS
2 x 200g Salmon fillets
½ cup Obento Teriyaki Marinade
2 tablespoons Obento Mirin
1 teaspoon grated ginger
1 clove garlic, grated
1 teaspoon sesame oil
1 bunch broccolini, sliced lengthways
2 bok choy, sliced lengthways
2 spring onions, diagonally sliced
Cooked rice
METHOD:
Pre-heat oven to 200-degree Celsius
Combine teriyaki marinade, mirin, ginger, garlic and sesame oil and marinate the salmon for 10 minutes.
Line a small tray with baking paper. Place salmon and marinade onto the tray. Bake for 15-20 minutes depending on the thickness of salmon.
In the meantime, blanche vegetables for 30 seconds. Drain and set aside
Remove cooked salmon and combine vegetables with marinade.
Serve salmon sprinkled with spring onion and steamed rice.
